Makes 4-5 quarts
½ tsp ginger
½ tsp nutmeg
1 quart apple juice (as fresh as you can find)
3 tbsp. honey
Heat the oven to 350ºF and bake the apples approximately 1 hour or until soft enough to push through a strainer.
When the apples are cool enough to handle, put them through a strainer.
Put the strained apples into a pot, and add the spices, juice and honey.
Bring to a simmer, but don’t boil. Cook until the mixture is heated through.
