Serves 8-10

Ingredients:

1 cup all-purpose flour

1 cup milk

1/4 teaspoon salt

1/4 teaspoon baking powder

2 eggs

3 or 4 tablespoons beef dripping
Instructions:

Preheat oven to 425ºF.

Add all of the ingredients except for the dripping into a mixing bowl, and mix for 1 minute on medium speed with an electric mixer. Mixture should be full of bubbles.

Add the dripping to an 8x12 inch (or similar sized) pan, then place the pan on the lower rack of the oven for a minute or two to heat up the fat.

Remove the pan, add the batter mixture to the pan (carefully, as the fat will be very hot), then return promptly to the oven.

Bake for 30-35 minutes.
