Onion Sauce for Michaelmas Goose

Makes approximately 3 cups

Ingredients:

 

  • 6 small-medium onions, sliced

  • 1/2 cup milk

  • 3/4 cup water

  • 1 large turnip, sliced

  • 3 tablespoons butter

  • pinch of grated nutmeg

  • 2 tablespoons of whipping cream

 

  1. Simmer the onions and turnip in the milk and water until soft.

  2. Add the butter, nutmeg, and some salt and pepper, then mash it all together.

  3. Blend to a puree, then add the cream.
