Onion Sauce for Michaelmas Goose
Makes approximately 3 cups
Ingredients:
-
6 small-medium onions, sliced
-
1/2 cup milk
-
3/4 cup water
-
1 large turnip, sliced
-
3 tablespoons butter
-
pinch of grated nutmeg
-
2 tablespoons of whipping cream
-
Simmer the onions and turnip in the milk and water until soft.
-
Add the butter, nutmeg, and some salt and pepper, then mash it all together.

Blend to a puree, then add the cream.
